Chicken Satay Skewers with Peanut Sauce

These skewers are such a crowd pleaser! They can be served as an appetizer or entree (served with rice and veggies). They are gluten-free and dairy-free as well, making them a fun and flavorful option for those who have dietary restrictions. If you have any leftover chicken and peanut sauce, they are wonderful stuffed in a pita with some butter lettuce and sliced cucumbers – a perfect lunch!

  1. Combine marinade ingredients in a large bowl. Add diced chicken and marinate in the fridge for at least 1 hour.

2. Skewer chicken and preheat a grill pan to medium-high (or you can also use an outdoor grill). Lightly coat the pan (or grill) with oil to prevent sticking. Grill the skewers for 10-15 minutes, or until completely cooked through, turning occasionally. Work in batches if needed.

3. Meanwhile, place peanut sauce ingredients in a food processor or blender. Process until smooth. Transfer sauce to a serving bowl.

4. Place skewers on a serving platter and garnish with chopped peanuts and Thai basil (or cilantro). Serve peanut sauce on the side.

All you need:

Marinade –

1/4 cup coconut cream

2 tablespoons reduced-sodium tamari

2 teaspoons fish sauce

2 teaspoons brown sugar

1 teaspoon ground ginger

1 teaspoon garlic powder

1 teaspoon sriracha

2 pounds boneless, skinless chicken breast (or thighs), diced

Wooden skewers (soaked in water) or metal skewers

1/4 cup creamy peanut butter

1/4 cup coconut cream

1 tablespoon reduced-sodium tamari

1 tablespoon sambal

Juice of 1 lime

2 teaspoons brown sugar

1 teaspoon ground ginger

Chopped peanuts and Thai basil (or cilantro), for garnish
