These skewers are such a crowd pleaser! They can be served as an appetizer or entree (served with rice and veggies). They are gluten-free and dairy-free as well, making them a fun and flavorful option for those who have dietary restrictions. If you have any leftover chicken and peanut sauce, they are wonderful stuffed in a pita with some butter lettuce and sliced cucumbers – a perfect lunch!
- Combine marinade ingredients in a large bowl. Add diced chicken and marinate in the fridge for at least 1 hour.
