Chicken Gnocchi Stew

This creamy and delicious stew is perfect for the fall weather that is upon us. I would make this meal in any season, however, because it’s so tasty. The veggies, kale and chicken compliment the parmesan tomato broth so beautifully. Serve this with crusty bread to soak up all that flavor!

  1. Heat olive oil in a Dutch oven or large saucepan over medium-high heat. Add onion, carrot, celery and garlic and cook for 3 minutes, stirring occasionally.

2. Add chicken and spices and stir to combine. Pour in chicken broth and bring to a boil; reduce heat to low. Cover pot and cook for 20 minutes, or until the chicken is cooked through.

3. Add kale, half-and-half, sundried tomatoes, parmesan and gnocchi. Stir to combine. Bring mixture to a simmer and continue to cook over medium-low heat for 8-10 minutes longer, stirring often, or until the kale is softened and the gnocchi is tender.

4. Ladle stew into bowls and garnish with more parmesan.

Chicken Gnocchi Stew

Serves 6

All you need:

2 tablespoons olive oil

1 small yellow onion, diced

3 carrots, peeled and diced

3 celery stalks, diced

3 peeled garlic cloves, finely chopped

1/2 pound chicken breast, diced

1 teaspoon Italian seasoning

1 teaspoon kosher salt

1/4-1/2 teaspoon crushed red pepper flakes

Freshly ground black pepper, to taste

4 cups (32 ounces) low-sodium chicken broth

1 small bunch lacinato (or curly) kale, stemmed and chopped

1 cup half-and-half

1/2 cup sundried tomatoes in oil, drained and chopped

1/2 cup freshly grated parmesan cheese, plus more for garnish

1 (16 ounce) package gnocchi

All you do:
