Cherry Vanilla Macadamia Nut Chia Seed Pudding

Chia seed pudding is a great go-to breakfast because you can make it at the beginning of the week and enjoy it straight out of the fridge all week long. This pudding is full of healthy fats and fiber, so it won’t spike your blood sugar and it will help to keep you full and energized until your next meal. The flavor of the creamy macadamia nut milk, roasted macadamia nuts and sweet cherries makes this dish so decadent that it could also serve as dessert (just place it in smaller serving dishes).

1. Place macadamia nut milk, honey, granola, cherries, vanilla, chia seeds, salt and 2 tablespoons chopped macadamia nuts in a large bowl and stir to combine.

 

 

2. Separate the pudding into 16 oz. mason jars (or your serving dish of choice) and refrigerate for at least 2 hours. Garnish with the remaining chopped nuts and serve.


Cherry Vanilla Macadamia Nut Chia Seed Pudding
Serves 2

All you need:
2 cups unsweetened macadamia nut milk (or coconut milk)
2 tablespoons honey
1/4 cup chopped roasted macadamia nuts, divided
1/3 cup crushed granola
2 tablespoons dried cherries
1 teaspoon pure vanilla extract
6 tablespoons chia seeds
Pinch salt

All you do:
1. Place macadamia nut milk, honey, granola, cherries, vanilla, chia seeds, salt and 2 tablespoons chopped macadamia nuts in a large bowl and stir to combine.
2. Separate the pudding into 16 oz. mason jars (or your serving dish of choice) and refrigerate for at least 2 hours. Garnish with the remaining chopped nuts and serve.
