Cheese Tortellini Chopped Salad

This is one of those magical meals that comes together in minutes. Peppery homemade Italian dressing, crisp lettuce, artichokes, pepperoni, parmesan and mozzarella are tossed with tender cheese tortellini. It’s a great main dish or side dish!

  1. Combine dressing ingredients in a large mixing bowl.

2. Add lettuce, tortellini, artichokes, pepperoni and parmesan and toss to combine. Add mozzarella and lightly toss again until everything is well coated.

3. Let salad sit for 5-10 minutes to allow the flavors to marinate, then serve. Garnish with additional freshly ground black pepper, if desired.

Cheese Tortellini Chopped Salad

Serves 4

All you need:

Dressing –

1/4 cup olive oil

2 tablespoons red wine vinegar

1/4 teaspoon dried basil

1/4 teaspoon dried oregano

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon kosher salt

Pinch crushed red pepper flakes

Freshly ground black pepper, to taste

1 head green lettuce or romaine lettuce, chopped

1 (9 ounce) package cheese tortellini, cooked according to package instructions

1/3 cup canned quartered artichoke hearts, drained and chopped

1/4 cup pepperoni, quartered

2 tablespoons shredded Parmesan cheese

1/4 cup shredded mozzarella cheese

All you do:
