Haluski (Cabbage and Noodles)

I was recently on vacation with a friend from Pennsylvania who was telling me that Polish food is very popular in her region and that I had to try haluski. I’ve always been a big fan of sauerkraut pierogis and this dish is a variation of those same flavors. Serve this on it’s own as Haluski (Cabbage and Noodles)

Garlic Shrimp Pappardelle Pasta

Pappardelle pasta is the wider version of a fettuccine noodle and I absolutely love it with seafood, braised short ribs or bolognese sauce. This pasta has comfort food written all over it – garlicky, buttery shrimp with cheesy noodles. To balance it out, add extra greens into the pasta mix or serve some roasted vegetables Garlic Shrimp Pappardelle Pasta

Caprese Salad Wraps

If I could think of one dish that I make all the time in the summer it’s caprese. I always look forward to pairing juicy tomatoes with creamy mozzarella and fresh basil from my garden. These wraps are a perfectly portable way to enjoy those flavors on-the-go or on your next outdoor adventure. If prepping Caprese Salad Wraps

Bacon, Havarti and Arugula Quiche

With Easter right around the corner, I’ve been starting to think of some tasty brunch items to include on my menu. This quiche is somewhat unique because it uses phyllo dough for the crust instead of pastry dough, providing a wonderful flaky texture. The creamy and slightly sweet Havarti cheese pairs beautifully with the salty Bacon, Havarti and Arugula Quiche

Mediterranean Baked Chicken

Chicken can be quite boring, but this is definitely an exception. This chicken is marinated with an abundance of flavors and baked to a beautiful golden brown. Serve this with farro, quinoa or pasta. This dish is great for a weeknight meal, but would also be great for entertaining! Pair with a crisp white wine Mediterranean Baked Chicken

Pineapple Ginger Meatballs

Meatballs are one of my favorite meal prep items because they are super flavorful and reheat well. These meatballs are the perfect combo of sweet, sour and spicy. I recommend serving this over rice or rice noodles if you’re having it as a meal, but you could also serve this as a fun appetizer on Pineapple Ginger Meatballs

Shrimp Creole

With the holidays behind us, I’m ready to incorporate some lighter meals into our weekly routine. This dish is on the table in less than 30 minutes, but tastes like it’s been stewing for hours. I served mine with white rice, but this would also be good with grits or zucchini noodles. Heat butter in Shrimp Creole
