Potato Chip Crusted Chicken Tenders

Potato chips are one of my favorite snacks (especially kettle-cooked!) and we had quite a bit leftover after this weekend’s festivities. I decided to use the chips we had left to create the perfect crunchy coating for these chicken tenders. This recipe could not be simpler, and I like the that these tenders are less Potato Chip Crusted Chicken Tenders

Zesty Turkey Sausage Rigatoni

As family starts to roll into town, I always have a plan for easily feeding a crowd and pasta is definitely a simple solution. This pasta sauce provides just the right amount of heat and the rigatoni is the perfect vessel to soak up all those yummy San Marzano tomato juices. Serve this with a Zesty Turkey Sausage Rigatoni

Broccoli Walnut Stir-Fry

Walnuts are one of my favorite ingredients to add to plant-based dishes because they add a nice meaty texture. In this dish they are paired with colorful veggies and coated in a spicy citrus sauce. This stir-fry makes a great make-ahead lunch or dinner to enjoy throughout the week. Serve this over rice or rice Broccoli Walnut Stir-Fry

Veggie Taco Pizza

Pizza and tacos are two of my absolute favorite foods (I’m sure most of you can agree). This pizza is the best of both worlds! I decided to go the vegetarian route with this one – highlighting sweet corn and tomatoes which are at their peak of freshness right now. If you can’t find queso Veggie Taco Pizza

Haluski (Cabbage and Noodles)

I was recently on vacation with a friend from Pennsylvania who was telling me that Polish food is very popular in her region and that I had to try haluski. I’ve always been a big fan of sauerkraut pierogis and this dish is a variation of those same flavors. Serve this on it’s own as Haluski (Cabbage and Noodles)
