Farmer’s Market Pasta

We are in full-on summer veggie mode right now. It’s a perfect time to visit your local farmer’s market and pick up sweet corn, tomatoes, bell peppers, zucchini and summer squash. Roasted Vegetable and Chickpea Stew

1. Preheat oven to 425. Place diced veggies on a large sheet pan and drizzle with olive oil. Season with salt and pepper and roast for 25 minutes, or until nicely caramelized.  2.
