Sweet summertime – we’ve waited so long for this! I’m kicking off the season by sharing this yummy salad recipe which would be perfect to take on a picnic or to your next gathering. This salad is great on it’s own, but would be wonderful served with grilled chicken or salmon as well. If prepping ahead, wait to dress the greens until right before serving.
- Whisk dressing ingredients together in a mixing bowl. Set aside.
2. Place salad greens in a large bowl and drizzle half of the dressing over. Toss gently until the greens are lightly coated. Transfer the remaining dressing to a serving dish.
3. Place the salad greens in a serving bowl and top with walnuts (or pecans), Monterey Jack cheese and blueberries. Serve remaining dressing on the side.
Butter Lettuce Salad with Blueberries and Poppyseed Dressing
Serves 4
All you need:
Dressing –
3/4 cup mayo
1/4 cup milk
1/4 cup white wine vinegar
1/4 cup sugar
2 tablespoons poppyseeds
1/2 teaspoon ground mustard
Pinch salt
10 oz. butter lettuce leaves
1/2 cup candied walnuts (or pecans)
1/2 cup cubed Monterey jack cheese
1/2 cup fresh blueberries
All you do:
