1. Combine pesto ingredients in a food processor until smooth.
2. Spread 1 tablespoon butter onto each slice of bread. Turn the bread slices over and smear evenly with pesto.
3. Top 4 of the slices with burrata, tomatoes and shredded mozzarella, then top with the other bread slices.
4. Preheat a nonstick pan or griddle over medium heat. Drizzle the pan with olive oil and add the sandwiches (cook 2 at a time). Cook for 3-4 minutes per side, or until golden brown and crisp. Slice in half and serve immediately.
Burrata and Arugula Pesto Grilled Cheese

All you need:
Pesto
1 cup arugula
5 fresh basil leaves
1/2 cup toasted almonds
1/4 cup freshly grated Parmesan cheese
1/2 cup olive oil
Juice of 1/2 lemon
Salt and pepper, to taste
Crushed red pepper, to taste
8 slices multigrain bakery bread
8 tablespoons unsalted butter, room temperature
2 balls burrata cheese
2 vine-ripened tomatoes, sliced
1 cup shredded mozzarella cheese
Olive oil, for cooking the sandwiches
