BFY (Better For You) BLT

One of my favorite quick-fix meals are BLTs. They always seem to satisfy because of their perfect combination of protein, carbohydrate and fat. I love bacon (in moderation!) and although it’s not the best time of year to find tomatoes, you can always find a perfect avocado and crisp lettuce. I decided to boost the nutritional value of my sandwich up another notch by using sprouted grain bread (available in the Health Market at Hy-Vee or at specialty stores like Trader Joe’s or Whole Foods). 100% whole wheat bread works just as well.

I love spicy condiments, so I made a chipotle mayo (light, of course) to bring it all together. Pair this meal with apple slices and you’ve got 4 good groups covered!

1. Preheat oven to 400.
2. Lay bacon slices on a baking sheet lined with foil. Bake 15-20 minutes, or until desired crispness.

3. Meanwhile, place mayo ingredients in a blender and process for 30 seconds. Transfer to a bowl.

4. Smear each slice of toast lightly with chipotle mayo.

5. Top one side of the bread with tomato and lettuce and the other with avocado. Finish with bacon.

6. Carefully place the avocado bread slice on top of the bacon and cut the sandwich in half. Serve.

BFY (Better For You) BLT
Serves 4

All you need:
8 slices bacon (any variety)
2-3 tomatoes, sliced
1/2 head lettuce, torn into large pieces
1 avocado, peeled and sliced thin
8 slices sprouted grain bread (or whole wheat), toasted

Chipotle Mayo
1/2 cup light mayo
1 canned chipotle pepper in adobo
1 tbsp. adobo sauce (from the same can)
1 garlic clove

All you do:
1. Preheat oven to 400.

6. Carefully place the avocado slice on top of the bacon and cut the sandwich in half. Serve.
