Beets have always been one of my favorite veggies – I love the earthy flavor! This dish is a fun way to enjoy your veggies – beets, avocado and cucumber are combined with a soy and rice vinegar sauce and topped with sesame seeds, lime zest and peanuts. Delicious over cold rice or salad greens!
- Steam beets until tender, about 15-20 minutes. Drain and allow to cool.

2. In a mixing bowl, combine lime juice, rice vinegar, soy sauce, sambal, sesame oil and ginger.

3. Add beets, avocado and cucumber and stir to combine. Cover and refrigerate until ready to serve.

Beet Poke Bowl
Serves 2-3
All you need:
4 small beets, peeled and diced
Zest and juice of 1 lime
1 tablespoon rice vinegar
1 tablespoon soy sauce
2 teaspoons sambal oelek
1 teaspoon sesame oil
1/4 teaspoon ground ginger
1 small avocado, pitted and cubed
1 small cucumber, peeled, seeded and diced
Sesame seeds and chopped roasted peanuts, for garnish
All you do:
- Steam beets until tender, about 15-20 minutes. Drain and allow to cool.
