This meal is just one of many examples of how plant-based meals can be absolutely delicious and filling. The flavors of the BBQ tofu, spiced roasted veggies, creamy black beans, hearty brown rice and fresh lime meld perfectly together. You can make this recipe using a variety of vegetables or beans (use what you have on-hand). This makes a great lunch to pack for work because it’s easy to portion and reheats nicely. YUM.
- Preheat oven to 425.
- Combine spices in a small bowl. Place tofu in one bowl and veggies in another. Drizzle 1 tablespoon of olive oil over each bowl and sprinkle evenly with spice mixture and toss to coat.
3. Place tofu on one rimmed baking sheet and veggies on another. Bake for 10 minutes.
4. Remove tofu from the oven and coat with BBQ sauce. Return to the oven and roast the tofu (and veggies) for 5 minutes longer.
5. Scoop rice into 4 serving bowls. Top with beans, roasted veggies and BBQ tofu. Squeeze fresh lime juice over each bowl and serve.
BBQ Tofu and Veggie Rice Bowls
Serves 4
All you need:
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon black pepper
1 (16 oz.) block super-firm tofu, torn into bite sized pieces
2 tablespoons olive oil
1 sweet potato, peeled and diced
1 red bell pepper, diced
2 cups broccoli florets
1/2 cup BBQ sauce
4 cups cooked brown rice
1 (15 oz.) can black beans, drained and rinsed
Juice of 1 lime
All you do:
