Cold weather always has me craving warm casseroles like this baked pasta. This dish is super family-friendly and a fun one for kids to help prepare. It reheats really well too, making it a great meal prep item to enjoy throughout the week. Serve this with a big leafy green salad or roasted broccoli and cauliflower for a veggie-full meal that everyone will love!
- Preheat oven to 450 degrees. Place cherry tomatoes on a baking sheet and drizzle with 2 teaspoons olive oil. Season with 1 teaspoon of kosher salt and toss gently to coat the tomatoes with oil. Roast for 15 minutes.

2. Whisk the eggs, Parmesan, garlic, onion, oregano and parsley in a large mixing bowl. Add cooked spaghetti and toss to combine.

3. Turn the oven temperature down to 350 degrees. Place the spaghetti mixture in a 13×9 baking dish. Top with cottage cheese, marinara sauce, half of the roasted tomatoes and mozzarella. Bake for 30 minutes.

Baked Spaghetti with Roasted Tomatoes
Serves 6
All you need:
1 1/2 pounds cherry tomatoes
2 teaspoons olive oil
1 teaspoon kosher salt
2 eggs
1/2 cup grated Parmesan cheese
3 garlic cloves, minced
1 small onion, diced
1 teaspoon dried oregano
1 teaspoon dried parsley
1 pound spaghetti, cooked and drained
1 cup cottage cheese
1 (24 oz.) jar marinara sauce
1/2 cup finely shredded mozzarella cheese
All you do:
