Squash season is among us and I love coming up with ways to use it besides simply mashed or roasted. The air fryer works beautifully in this recipe because it cooks the squash quickly and provides a nice caramelization on the outside of each fry. These make a great appetizer (paired with a chipotle aioli or lemon aioli). You could also pair the fries with pork tenderloin and a green salad for the perfect fall meal!
- Preheat air fryer to 400 degrees. Lightly coat the inside with nonstick spray. Peel and cut the squash into fries (about 1/4″ thick).
2. Place the fries in a mixing bowl and combine with olive oil, garlic powder, paprika, onion powder, grated parmesan, salt and pepper.
3. Once preheated, place fries in the air fryer (in a single layer as much as possible) and cook for 15 minutes, tossing the fries 1/2 way through.
4. Transfer the fries to a serving plate and sprinkle with parmesan and parsley.
Parmesan Garlic Fries
Serves 4
All you need:
1 large (or 2 small) butternut squash
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon onion powder
1/4 cup grated parmesan, plus more for garnish
1/4 teaspoon salt
Pinch black pepper
Chopped parsley, for garnish
All you do:
