An incredibly simple dessert to make, clafoutis is a great way to enjoy seasonal cherries and berries. Serve this with a scoop of ice cream or gelato at your next summer gathering!
- Preheat oven to 350.
- Coat a 10-inch pie plate or casserole dish with nonstick spray and add cherries and berries.
3. Place eggs, milk, sugar, almond flour, cornstarch, melted butter, vanilla, cinnamon and salt in a blender and process until smooth. Pour over the fruit.
4. Bake for 45-50 minutes, or until no longer jiggly in the center. Allow to cool for 10 minutes, then garnish with toasted almonds and a light dusting of powdered sugar.
Cherry Berry Almond Clafoutis
Serves 8
All you need:
1 cup fresh cherries, stemmed and pitted
1 cup fresh blueberries
1 cup fresh blackberries

1 cup whole milk
1/2 cup sugar
1/2 cup almond flour
