I love when my meals are colorful and full of fresh flavor! These bowls are the so delicious and perfect for meal prep. We definitely will be keeping this meal on rotation. Although this salad is vegetarian, you could easily top it with grilled chicken or salmon if you want to add more protein.
- Whisk vinaigrette ingredients together in a bowl.
2. Place chopped kale onto the bottom of 4 shallow serving bowls. Top with quinoa, veggies, apple, egg, avocado, pepitas, almonds, cranberries and cheese. Drizzle with dressing and enjoy!
Quinoa Kale Power Bowls with Apple Cider Vinaigrette
Serves 4
All you need:
2 bunches kale, stemmed and finely chopped
2 cups cooked quinoa
1 English cucumber, seeded and diced
1 small red onion, finely diced
1 yellow bell pepper, diced
1 small green apple, cored and diced
4 hard boiled eggs, chopped
1 small ripe avocado, pitted and diced
1/2 cup roasted salted pepitas (pumpkin seeds)
1/2 cup toasted sliced almonds
1/2 cup dried cranberries
1/2 cup crumbled gorgonzola cheese (or feta)
Vinaigrette –
1 cup olive oil
3/4 cup apple cider vinegar
3 tablespoons honey
1 tablespoon Dijon mustard
2 peeled garlic cloves, minced
1 teaspoon kosher salt
Freshly ground black pepper, to taste
All you do:
