These chicken burgers have so much flavor! Ground chicken by itself can be a bit bland, so I added lots of yummy spices and feta to jazz it up. Radishes aren’t typically added to tzatziki sauce, but I really like the color, crunch and slightly spiciness they provide. I suggest serving these burgers with lettuce wraps and baked sweet potato fries. Or, pack them up for lunch with a side of fresh fruit.
1. Combine burger ingredients (except the oil) in a large mixing bowl. Shape into four patties.
2. Heat oil in a large nonstick skillet (I used cast iron) over medium-high heat. Cook for 4-5 minutes per side, or until cooked through.
3. While the burgers cook, combine the tzatziki sauce ingredients in a small bowl.
4. Place burgers onto serving plates and top with tzatziki.
Chicken Feta Burgers with Radish and Cucumber Tzatziki
Serves 4
All you need:
1 pound ground chicken (I used Smart Chicken)
1/4 cup chopped parsley
1/4 cup crumbled feta cheese
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Zest of 1 lemon
1 large egg
1 tablespoon olive oil
Tzatziki –
1 cup plain Greek yogurt
1/2 English cucumber, seeded and grated
3 radishes (ends trimmed), grated
Juice of 1 lemon
1 tablespoon chopped fresh dill
Salt and freshly ground black pepper, to taste
