Turkey Taco Salad with Jicama, Mango and Radish Slaw

I recently attended a food and wine event and while I was standing at one of the tables I overheard someone asking what jicama was. This is why it’s important as food professionals to educate everyone about different types of foods.
Jicama is in the root vegetable family and tastes like a savory apple. It’s slightly sweet and super crisp, making it wonderful for slaws and veggie spring rolls. It also adds great crunch to stir-fries.
In this recipe, I combined the jicama with sweet mango and spicy radish for a fun flavor combo. Paired with creamy avocado, crisp lettuce and warm turkey taco meat, this salad is super filling and nutritious, making it a perfect addition to your lunch or dinner menu.

1. Heat olive oil in a skillet over medium-high heat. Add onion and garlic and cook for 2 minutes, stirring often. Add ground turkey and cook until no longer pink. Add spices and stir to combine. Turn heat to low to keep warm.

2. Place slaw ingredients in a large mixing bowl and toss gently to combine.
3. Place 3 cups romaine lettuce into 4 large serving bowls. Top with the turkey mixture and slaw. Garnish with avocado, yogurt and tortilla chips and serve.

 

 

 

 

Turkey Taco Salad with Jicama, Mango and Radish Slaw
Serves 4

All you need:
1 tablespoon olive oil
1 yellow onion, diced
3 garlic cloves, minced
1 pound 99% lean ground turkey
2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes

Slaw
1 small jicama, peeled and julienned
1 ripe mango, peeled, pitted and julienned
5 radishes, trimmed and thinly sliced
Juice of 2 limes
1/4 cup chopped cilantro
1 tablespoon agave nectar
2 teaspoons rice vinegar
1/4 teaspoon salt

12 cups chopped romaine lettuce
Cubed avocado, plain Greek yogurt and crushed tortilla chips, for garnish

All you do:
