Salads are so versatile. The variety of lettuces, protein, dressings and garnishes out there allows one to play with lots of different flavors. Today I was in need of some tropical flavors! I’m a huge fan of mango – it’s slightly sweet and is a great match with lime and cilantro dressing. For the longest time it was my least favorite fruit to cut up, but with some practice (and finding good ripe ones!) it becomes much easier. Still scared? No worries – simply thaw some frozen mango chunks.
Because the dressing is so light, the sirloin steak adds a nice bold flavor which helps bring the whole dish to life.
This recipe is ready in 20 minutes and cost me $18.55.
1. Preheat oven to 350.
2. In a small bowl, combine garlic, cilantro, honey, lime juice and 1/4 cup olive oil. Season with salt and pepper and set aside.
3. Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Season steak with salt and pepper on both sides and add to the skillet. Cook for 4 minutes on each side and place in the oven for 10 minutes.
4. Meanwhile, dice mango, slice onion and chop romaine. Arrange on plates.
5. Allow steak to rest 5 minutes then slice.
6. Place 3-4 steak slices on each salad plate and drizzle with dressing.

Serves 4
All you need:
2 garlic cloves, minced
1/4 bunch cilantro, chopped
1 tablespoon honey
Juice of 2 limes
1/4 cup + 1 tablespoon extra virgin olive oil, divided
1 lb. sirloin steak
3 mangos
1/4 red onion
1 large head romaine lettuce
