Toast farro for 1 minute over medium-high heat in a large saucepan. Add
broth and bring to a boil. Reduce to a simmer, cover and cook for 20
minutes, or until tender. Add toasted coconut.
3. Shred beef with two forks. Scoop farro into bowls and top with beef. Garnish with coconut.

All you need:
Beef
1 (3 lb.) chuck roast, cut into chunks
1 (14 oz.) can beef broth
1 tablespoon chili powder
1 tablespoon brown sugar
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1 red onion, sliced
Juice and zest of 2 oranges
1 bunch cilantro, chopped
Farro
1 1/2 cups farro
2 cups chicken (or veggie) broth
1/2 cup shredded coconut, toasted (plus more for garnish)
