Crispy Purple Cauliflower & Broccoli with Whipped Feta, Pistachios & Hot Honey

Purple cauliflower makes this dish so vibrant, and the creamy, tangy feta with crunchy pistachios and a drizzle of hot honey gives it that sweet-savory balance. It feels elevated enough for entertaining but is still very simple to make. Serve with grilled meat or seafood or serve with a side of quinoa for a plant-forward meal! So delish.

  1. Preheat oven to 425 degrees. Toss the cauliflower and broccoli with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on a large rimmed baking sheet in a single layer.

2. Roast for 20 minutes, or until tender with browned edges.

3. Meanwhile, blend feta, Greek yogurt, olive oil, lemon juice, and pepper in a food processor or blender until smooth and creamy. Add water a little at a time until the mixture is spreadable.

4. Spread whipped feta onto a serving platter. Pile warm vegetables on top and garnish with pistachios, hot honey, and lemon zest.
