Most of us have tried overnight oats by this point, but have you ever tried them blended? This was a new concept for me until one of my fellow chefs at work was talking about it and now I’m hooked. These creamy oats are protein packed and bursting with delicious cherry vanilla flavor. I topped my oats with more fresh cherries (because I want all the yummy cherries I can get right now) and dark chocolate chips to contrast the sweetness, but granola or toasted nuts would be great as well. This is just another fun way to enjoy seasonal summer fruit while we can. If you are preparing this recipe off-season, frozen pitted cherries will work just fine!
- Place all ingredients in a blender and process until very smooth.
2. Pour mixture into serving dishes and chill overnight.
3. Garnish as desired and enjoy! (Oats will be good to enjoy for up to 4 days.)
Cherry Blended Overnight Oats
Serves 4-5
All you need:
2 1/2 cups old-fashioned oats
1 1/2 cups milk (I used unsweetened soy milk, but any will work)
1 cup plain Greek yogurt
1 1/2 cups pitted cherries (fresh or frozen)
1 banana
2 tablespoons honey
2 tablespoons almond butter (or other nut butter)
2 teaspoons pure vanilla extract
1/2 teaspoon salt
All you do:
- Place all ingredients in a blender and process until very smooth.
- Pour mixture into serving dishes and chill overnight.
- Garnish as desired and enjoy! (Oats will be good to enjoy for up to 4 days.)
