Raw Beet and Carrot Salad with Citrus Vinaigrette

Beets are one of my favorite veggies. Not only are they super good for you, but they add beautiful, vibrant color to side dishes and salads. This salad comes together in no time and is the perfect picnic item because it contains no dairy and it gets better the longer it sits. Pair with grilled BBQ chicken or chicken wings for a summer meal that is oh-so-tasty!

1. Shred the beets and carrots using a food processor (or grate by hand). Transfer to a large mixing bowl.

 

 

2. In a small bowl, whisk together the vinaigrette ingredients. Drizzle over the salad.

 

3. Add pistachios and raisins and stir to combine. Serve immediately or keep cold until ready to serve.

 

Raw Beet and Carrot Salad with Citrus Vinaigrette
Serves 4

All you need:
3 large beets, peeled, trimmed and quartered
3 large carrots, peeled, trimmed and cut in half

Vinaigrette
Zest and juice of 1 orange
Zest and juice of 1 lime
2 teaspoons honey
1 teaspoon Dijon mustard
1/4 cup olive oil
Salt and pepper, to taste

1/2 cup shelled pistachios
1/4 cup golden raisins

All you do:
